Christmas Cookies 2009

This is what I made this year

PECAN FINGER COOKIES (I used white sugar)

1 c. buttermilk biscuit mix
1/4 c. melted butter
1/4 c. chopped pecans
1 tbsp. Sugar Twin (either white or brown) or sugar in equal amount
1 tsp. vanilla
2 tbsp. hot water

Mix first 5 ingredients, then beat in the hot water until the dough pulls away from sides and forms a ball. With hand shape dough into 24 finger shaped cookies on ungreased cookie sheet, 1 inch apart. Bake 12 to 15 minutes at 375 degrees, lightly brown.

Powder Sugar Pecan Fingers
* 24 Servings
* Prep: 15 min. Bake: 15 min./batch + cooling

Ingredients

* 1 cup butter, softened
* 1/2 cup confectioners' sugar
* 2 cups all-purpose flour
* 1/2 teaspoon salt
* 1 cup finely chopped pecans
* Additional confectioners' sugar

Directions

* In a large bowl, cream butter and sugar until light and fluffy. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in pecans.
* Shape tablespoonfuls into 2-in. fingers. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 15-18 minutes or until lightly browned. Roll warm cookies in confectioners' sugar; cool on wire racks. Yield: about 4 dozen.

Nutrition Facts: 1 serving (2 each) equals 149 calories, 11 g fat (5 g saturated fat), 20 mg cholesterol, 126 mg sodium, 11 g carbohydrate, 1 g fiber, 2 g protein.

Oatmeal Raisin Cookies

Ingredients

* 1 1/4 cups Butter
* 3/4 cup Brown sugar
* 1/2 cup Sugar
* 1 Egg
* 1 teaspoon Vanilla
* 1 1/2 cups All purpose flour
* 1 teaspoon Baking soda
* 1 teaspoon Salt
* 1 teaspoon Cinnamon
* 1/4 teaspoon Nutmeg
* 3 cups Oats quick or old-fashioned
* 1 cup Raisins


Preparation

Preheat oven to 375 degrees.

Beat margarine and sugars until fluffy. Beat in egg and vanilla. Add combined flour, baking soda, salt and spices; mix well. Stir in oats and raisins.

Drop by rounded tablespoonfuls onto ungreased cookie sheets.

Bake 8-9 minutes for chewy; 10-11 minutes for crunchy cookies.

Cool 1 minute on cookie sheet. Remove to wire rack.

Store tightly covered.

Triple-Chocolate Peppermint Treats

Ingredients

* 1 cup butter, softened
* 1 cup packed brown sugar
* 1/2 cup sugar
* 2 eggs
* 2 teaspoons vanilla extract
* 2-1/2 cups all-purpose flour
* 3/4 cup baking cocoa
* 1 teaspoon salt
* 1 teaspoon baking soda
* 1 cup (6 ounces) semisweet chocolate chips
* 1/2 cup 60% cacao bittersweet chocolate baking chips

* WHITE CHOCOLATE FROSTING:
* 1/2 cup vanilla or white chips
* 4 ounces cream cheese, softened
* 3 cups confectioners' sugar
* 1/3 to 1/2 cup crushed peppermint candies

Directions

* In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, cocoa, salt and baking soda; gradually add to creamed mixture and mix well. Stir in the chocolate chips.
* Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 8-10 minutes or until set. Cool for 2 minutes before removing to wire racks to cool completely.
* In a microwave, melt vanilla chips at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth; cool.
* In a small bowl, beat cream cheese and confectioners' sugar until smooth. Beat in melted chips. Frost cookies; sprinkle with peppermint candies. Yield: about 6-1/2 dozen.

SWIRLED™ Holiday Snowball Cookies

1 1/2 cups (3 sticks) butter, softened
3/4 cup powdered sugar
1 tablespoon vanilla extract
1/2 teaspoon salt
3 cups all-purpose flour
1 2/3 cups (10 ounce package) NESTLÉ® TOLL HOUSE® SWIRLED™ Holiday Morsels
1/2 cup finely chopped nuts
Powdered sugar

1. PREHEAT oven to 375°F (190°C).
2. BEAT butter, 3/4 cup powdered sugar, vanilla extract and salt in large mixer bowl until creamy. Gradually beat in flour. Stir in morsels and nuts. Shape level tablespoons of dough into 1 1/4-inch balls. Place on ungreased baking sheets.
3. BAKE for 10 to 12 minutes or until cookies are set and lightly browned. Remove from oven. Sift powdered sugar over hot cookies on baking sheets. Cool on baking sheets for 10 minutes; remove to wire racks to cool completely. Sprinkle with additional powdered sugar, if desired. Store in airtight containers.

Makes 4 1/2 dozen cookies.
