Pepper Onion Relish
oil
1-2 cloves garlic, minced
3 Red, green, yellow sweet peppers cut into Julienne strips or chopped
2 Large onions, thinly sliced
rosemary sprig
3 Tablespoons red wine vinegar
in a large skillet heat 1 tablespoon of the oil over medium heat.
Add garlic, sweet peppers, onion, and rosemary sprig;
cover and cook for 10 to 15 minutes or until tender, stirring occasionally.
Stir in vinegar.
Remove from heat.
Serve cold or keep warm.
