APPLE LATKES

APPLE LATKES
2/3 c Yogurt (plain or Vanilla)
2/3 c Orange juice
2 Eggs
1 1/3 c Flour
3/4 tsp Baking Powder
1/3 c Sugar 2 Apples (cored, optionally pealed, and grated course)
Vegetable Oil for Frying
Powdered Sugar
Cinnamon
Various Preserves
Apple Sauce
In a large bowl, mix Yogurt and Orange Juice.
Once well mixed, mix in eggs.
In a second bowl mix together flour, baking powder and sugar.
Fold dry ingredients into wet and mix in apples.
Mix well.
Heat oil until hot; the hotter the less oily the pancakes.
Drop batter into oil in 2 heaping teaspoons at once.
Fry on each side 2 minutes or until brown.
Drain on paper towls and serve sprinkled with powdered
sugar and cinnimon, or with apple sauce or preserves.
