Meatloaf in a Mug
Found in Mug Meals by Dina Cheney
1 c (about 6 oz) cooked ground beef
1/4 c whole-wheat breadcrumbs
3 T ketchup
1 T finely chopped fresh flat leaf parsley
1 T finely grated carrots
1 T finely chopped red onions
1 t Dijon mustard
1 t low sodium soy sauce
1/2 t dried thyme
1/8 t kosher salt
A few grinds of black pepper
In a small bowl, stir together all ingredients, pour into a 16 oz mug. Pack down.
Cover, and microwave until hot, about 2 minutes.
