Mounds Bar Martinis

Mounds Bar Martinis

PER SERVING (half of recipe, 1 martini): 112 calories, 0g fat, 80mg sodium, 2.5g carbs, 0.5g fiber, 1.5g sugars, 1g protein -- PointsPlus® value 4*

Creamy... chocolatey... coconut-y and deeeeeeeelicious. This recipe will rock your world!

Ingredients:
3 oz. vodka (80 proof)
1 packet Diet Swiss Miss Hot Cocoa Mix (the 25-calorie one)
2 oz. Torani Sugar Free Coconut Syrup
2 tbsp. Fat Free Reddi-wip

Directions:
Fill a martini shaker halfway with ice (preferably crushed). Combine cocoa mix with 2 oz. hot water, and mix well. Then add 2 oz. cold water, and pour the mixture into the martini shaker. Add the vodka, syrup and Reddi-wip, and cover the top of the shaker. Shake for about a minute, or until the liquid is cold. Then strain into 2 martini glasses. Enjoy!

MAKES 2 SERVINGS

Backyard BBQ Beef Cups

Backyard BBQ Beef Cups

Ingredients

3/4 pound lean ground beef or ground turkey
1/2 to 3/4 cup barbeque sauce
1 tablespoon dried minced onion or 1 small onion chopped finely
1 (12 ounce) package Pillsbury Crescent Recipe Creations Seamless Dough Sheet- see bottom of page)
1/3 cup shredded Cheddar cheese (use low fat to cut calories and natural to cut antibiotics, etc)

Directions

Preheat oven to 375 degrees, spray a 12-cup muffin pan with nonstick spray

Bring a large skillet sprayed with nonstick spray to medium-high heat. Add beef and onion. Sitrring frequently, cook until beef is crumbled and browned and onion is soft, about 8-10 min.

Reduce heat to low. Stir in bbq sauce and let simmer for 5 minutes

Roll dough out into a 12 inch by 9 inch rectangle. using a knife or piza cutter cut into 12 squares

Place each square into a muffin cup and press it into the bottom and up along the sies to form a little dough cup for the beef

Evenly distribute beef mixture among the cups. Bake in the oven 12-15 minutes until golden brown

Ingredients

1 1/2 oz. (3 tbsp.) coconut rum
1 packet Swiss Miss Sensible Sweets Diet Hot Cocoa Mix
1 drop almond extract
Optional: Fat Free Reddi-whip

Directions

In your favorite mug, prepare cocoa with 3/4 cup hot water according to package instructions. Add the rum and almond extract. (Remember, just one DROP of extract!) Stir and, if you like, top with a generous squirt of Reddi-wip. Enjoy, preferably wrapped in a blanket by a roaring fire.
