Meat Loaf

Ingredients 1½ lbs ground beef ¾ cup Quaker quick oatmeal ¾ cup TruMoo milk 1 Eggland’s Best egg ½ cup onion, finely diced 1¼ tsp Morton salt ¼ tsp McCormick black pepper ⅓ cup ketchup 2 tbsp brown sugar 1 tbsp mustard Instructions Preheat oven to 350 degrees Combine ground beef, oatmeal, milk, egg, onion, salt and pepper in a medium sized mixing bowl. Using your hand, incorporate everything into the meat. This only takes 30 seconds or so, you do not want to over mix. Transfer meat into a large loaf pan and press it down evenly into the pan. Mix ketchup, brown sugar, and mustard in a small bowl. Pour over meatloaf. Bake at 350 degrees for 1 hour and 20 minutes Remove from oven and drain off excess grease. Chocolate Cherry No Bakes

Chocolate Cherry No Bakes

1 1/2c granola (you could also use oats)
1/2 c cherries, chopped
1/2 c almond butter
1/4 c dark chocolate chips
2 Tbsp chia seeds

Combine granola, cherries and chia seeds in a small bowl.
Melt the chocolate chips, and almond butter if necessary.
Add the melted almond butter and chocolate to the bowl.
Stir to combine.
Drop by spoonful onto a baking sheet.
Refrigerate until set.

Copycat Bob Evans Chicken & Noodles

Yields 8 servings

Ingredients

9 cups chicken broth
3/4 cups chopped carrots
3/4 cups chopped celery
1 cup chopped onion
1/2 cup butter
1/2 tsp black pepper
1/2 tsp salt
1 pound boneless skinless chicken breast
16 ounces homestyle noodles
Instructions

Add the chicken broth, chicken, butter, carrots, celery, onion, pepper and salt to the slow cooker. Cook this on low for 7 hours or on high for 3 hours. Remove the chicken and shred it with a fork. Return the chicken to the slow cooker and add the noodles to cook for another hour.
Notes

You can add the noodles at the same time you add the other ingredients if you'd like. You'll end up with a thicker noodle this way.

BACON CHICKEN POTATO CASSEROLE

Serves 8

Ingredients

2 pounds bone-in chicken thighs (or breasts)
8 potatoes, cut into wedges
1 cup crispy bacon, crumbled
1/3 cup extra-virgin olive oil
2 tablespoons garlic powder
1 tablespoon paprika
1/4 teaspoon cayenne
kosher salt and freshly ground pepper, to taste

Directions

Preheat oven to 400º F and lightly grease a baking dish with non-stick spray.

Place potatoes (in an even layer) in baking dish and season with salt and pepper.

Season both sides of chicken pieces generously with salt and pepper and set aside.

In a small bowl, whisk together garlic powder, paprika and cayenne. Take each piece of chicken and dredge it in the spice mixture.

Heat 2-3 tablespoons olive oil in a large skillet over medium-high heat and brown chicken on both sides.

Transfer to baking dish and rest chicken on top of potatoes.

Whisk remaining olive oil into spice mixture and mix until smooth. Then drizzle over browned chicken and potatoes. Top with crumbled bacon.

Place baking dish in oven and bake for 30-35 minutes, or until chicken is completely cooked through and potatoes are tender.

Remove from oven and let rest 5 minutes before serving.
