Ham Broccoli and Cheddar Roll

 Ingredients:
1 can pizza dough, refrigerated
1 cup ham, diced
1 cup broccoli, florets
8 ounces Cheddar cheese, shredded
0.5 cups ranch dressing

Directions:
 Using plastic wrap under the roll and rolling it tight as you go is very helpful. Lightly flour your work surface and roll out dough. Spread the ham, broccoli, cheese and ranch dressing over the dough. Roll up the dough jelly roll style, start with the long end. Once you have your roll, pinch the ends together.

Bake at 375 for 20-30 minutes or until outside is golden brown. Allow to cool and slice!

Freezing Directions: Follow directions above but DO NOT BAKE. Wrap in plastic wrap and place in a gallon freezer bag. (If it is too long to fit in a gallon freezer bag you can wrap it with foil after the plastic wrap.) Freeze.

To serve: Thaw. Bake at 375 for 20-30 minutes or until outside is golden brown. Allow to cool and slice! Servings: 4

Homemade Spaghetti Sauce

Ingredients
½ pound ground beef
30 ounces tomato sauce (homemade is the best!)
1 Tbsp Olive Oil
1½ tsp Dried Minced Onion
1½ tsp Parmesean Cheese
½ tsp basil
½ tsp oregano
½ Tbsp worchestershire sauce (optional)
dash of black pepper
one bay leaf

Method of Preparation
Brown beef and drain off fat. Mix in the rest of the ingredients and simmer for 10-20 minutes. Remove bay leaf before serving. Serve over pasta!

Homemade Taco Seasoning

Homemade Taco Seasoning {recipe}

Ingredients
2 Tbsp chili powder
5 tsp paprika
4 tsp cumin
3 tsp onion powder
2 tsp garlic powder
1 tsp salt
just a dash a cayenne pepper

Method of Preparation
Mix all ingredients together in a jar and shake them to mix. I normally use about half this mixture for each pound of beef we use, but start with a couple tablespoons and go from there to match your own taste!

Notes Tips: Depending on the chili powder you use, you may need more or less than the 2 Tbsp. I bought some expensive stuff once and it was a lot spicier than the cheaper store brand powder. So if yours is either really fresh or really potent, you may want to cut back a bit!

If your family is just getting used to eating less processed foods, try adding 1 tsp of organic cane sugar in with this mix so it seems more “normal” to them. Then back it out each time you make it. Soon enough, you won’t have any sugar in it and the package mixes won’t taste good at all!

Gingerbread Cookies

Gingerbread Cookies
Ingredients
  • 3 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 cup sucanat (or can use brown sugar)
  • 1/2 cup butter (at room temperature)
  • 3/4 cup molasses
  • 1 egg
  • Optional extra goodies for decorating: raisins, chocolate chips, gumdrops, frosting
Method of Preparation
1. In a large bowl combine flour, baking powder, baking soda, ginger, cloves, cinnamon and allspice.
2. Mix sucanat and butter until well blended using the paddle attachment on your mixer.
3. Add in egg and molasses and mix until blended.
4. Slowly add in flour mix a little at a time and mix until combined.
5. Cover and refrigerate for 1 hour.
6. Preheat oven to 350 degrees.
7. On a lightly floured surface, roll out dough to 1/4 inch and cut into shapes using desired cookie cutters.
8. Place on lightly greased cookies sheets and bake for 10-12 minutes.
9. Let cool and then decorate as desired or enjoy as is!


To make a mix for gifting:

1. Combine 2 cups of the flour with the baking soda and baking powder and mix well. Pour into a quart sized mason jar and pack down well.
2. Add in the 1 cup of sucanat and pack down well.
3. Mix together the remaining 1 1/2 cups flour with all the spices and pour into the jar.
4. Include the following instructions on a card:
Gingerbread Cookies~ 1. Empty top layer of jar into a large mixing bowl. Pour middle layer into a separate bowl and cream together with 1/2 cup softened butter, 3/4 cup molasses, and 1 egg. Add the rest of the jar in gradually and mix. Cover, and refrigerate for 1 hour. 2. Preheat oven to 350 degrees. 3. On a lightly floured surface, roll out dough to 1/4 inch and cut into shapes using desired cookie cutters. Place cookies on a lightly greased cookie sheet. 4. Bake for 10 to 12 minutes in preheated oven. Decorate as desired.
You can also include a gingerbread man cookie cutter or different goodies for decorating.

Better-Than-Condensed-Soup White Sauce

Better-Than-Condensed-Soup White Sauce

makes about the same as one 10-oz. can
3 Tablespoons butter
3 Tablespoons unbleached flour
1/4 teaspoon salt
1 cup milk, stock or combination
  1. Melt butter in heavy saucepan.
  2. Blend in the flour and salt, cooking until bubbly.
  3. Stir in your choice of milk, stock or a combination of the two, using a wire whisk to prevent lumps.
  4. Cook until just smooth and thickened.
Optional flavors and add-ins (replacing various “cream of…” condensed soups):
  • cheese: add 1/2 cup grated cheese and 1/4 t. dry mustard
  • tomato: use tomato juice as liquid (instead of milk or stock); add a dash of each: garlic salt, dried onion, basil and oregano.
  • mushroom: saute 1/4 cup chopped mushrooms and 1 T. finely chopped onion in the butter, before adding the flour.
  • celery: saute 1/2 cup chopped celery and 1 T. finely chopped onion in the butter, before adding the flour.
  • chicken: use chicken broth/stock as half the liquid. Add 1/4 t. poultry seasoning or sage, and diced cooked chicken, if desired.
  • for other varied flavors, try: curry powder, garlic/onion/celery salt, grated nutmeg, lemon juice, Worcestershire sauce, chili powder, chopped or blended vegetables, chopped parsley, chopped chives, chopped hard-cooked eggs.

Garlic Cheese Drop Biscuits

 Yield: About 9 biscuits

Ingredients
1/4 cup (1/2 stick) of unsalted butter
3 garlic cloves, smashed or diced
2 cups of baking mix
1 cup of shredded sharp or extra sharp Cheddar cheese
1 cup of buttermilk, more or less

Instructions

Preheat oven to 450 degrees F. Add the butter and garlic to a small saucepan and heat together until the butter is melted. Cook and stir for about 2 minutes, or until garlic is softened and tender, but do not brown. Remove from heat, strain out garlic if desired, and set infused butter aside. Stir together the baking mix and cheese. Add half the buttermilk, stir and add additional buttermilk as needed, just until flour pulls away from bowl and a soft dough forms. Use an ice cream scoop, or about 1/8 cup measure, to drop dough onto a silpat or parchment covered cookie sheet. Spoon some of the infused butter over each biscuit, reserving some for when the biscuits come out of the oven. Bake at 450 degrees F for 10 to 12 minutes, or until tops begin to lightly brown. Remove from oven and immediately spoon remaining butter over warm biscuits. Cook's

Notes: You can use more butter if you like. Okay to substitute milk, but you'll need less. I buy Pioneer brand buttermilk baking mix so that's what I use here. To substitute flour use 2 cups of self-rising flour, whisked together with 3 teaspoons of baking powder and 1/2 teaspoon of granulated sugar. Cut in 1/3 cup of Crisco shortening, add buttermilk and proceed.

 Optional Stir-ins: Finely diced raw onion or dry minced onion, minced jalapeno, chopped fresh parsley, sage, rosemary, thyme, chives, dill weed, Old Bay seasoning or Cajun seasoning are all good enhancements.
