Weeknight and Weekend Tomato Sauce

Weeknight Tomato Sauce

2 (16-oz.) cans crushed tomatoes—whatever you’ve got

2-12 cloves of garlic (When you’re adding garlic to something, you don’t follow a recipe—you follow your heart.)

3/4 stick of butter, salted or unsalted—just adjust your seasoning later

1-2 Tbsp. olive oil. I’ve never measured this amount. Just give it a good glug

1 medium onion, peeled and cut in half through the middle. Yes, you can leave that little stubby bit at the bottom.

In a large saucepan over medium heat, melt the butter with the olive oil. Smash the garlic cloves with the side of a knife or your favorite whacking stick, then throw them in the pot and cook until golden. Add the tomatoes and onion, give it a good stir, and reduce the heat to medium-low. Cook for half an hour, stirring occasionally. Give it a little taste, and add salt accordingly. Pull out the onion and whole garlic cloves, and put them aside on a small plate. The traditional Marcella recipe says to simply discard the onion, but I like bringing it (and the garlic) to the table to smear all over crusty bread.

Weekend Tomato Sauce

4 cans whole peeled tomatoes

At least 6 large cloves of garlic—more if you want; no one can stop you.

1 large or 2 small onions, very finely diced

1 small carrot, peeled and microplaned into the finest of fine shreds

A whole lot of olive oil—enough to coat the bottom of your pot

First, set a fine mesh strainer over a bowl. Put the tomatoes in the strainer, one at a time, and break them apart roughly with your hands. Remove the cores and as many seeds as you can, then dump whatever’s left into the bowl below. Once you’re done, rinse out each of the tomato cans with 1/2 cup of water, then add to the tomatoes. Hot tip: Keep one of the cans around to use as a spoon rest. You’re going to be doing a lot of stirring.

Get yourself a big sauce pot and cover the bottom with a thin coat of olive oil, then set it over medium heat. Add the onion, carrot, and a hefty pinch of salt. Cook until golden, about 5 minutes. If you like things with a bit of a kick, this would also be when you’d add a bit of crushed red pepper or Calabrian chili. It’s not essential, though, so don’t feel bad if you leave it out.

Mince your garlic as fine as you can—I find garlic presses worthless, but love a Microplane if you’re not yet great with a knife. Throw it in the pot and cook while stirring until it just begins to turn golden, then take the pan off the heat.

Put a heat diffuser on the burner, then put the pan back on. If you don’t have a heat diffuser, you should buy one. I’d even go as far as saying it’s the “secret ingredient” to most of the great sauces you’ve had in your life. The next few hours will be where the magic happens.

Add the tomatoes, turn the heat to high, and bring to a near boil, stirring every few minutes. Reduce the heat to medium low and simmer, gently stirring every 10 minutes, for at least an hour. Once that hour is up, then you can taste with the intent of making adjustments. If it’s a little acidic, add a pinch of baking soda or sugar, or a few pats of butter. If it’s bland, add salt. If you’re so inclined, add a bunch of fresh, torn up basil. And if it’s not as intense as you want it, just keep simmering and stirring.

Personally, I like my sauce cooked for a minimum of 90 minutes. When I make gravy—which is sauce with a bunch of different meats thrown in—I can let that pot go for two, three hours. What’s important here is that you stay on top of the sauce, tasting every so often, taking your own notes, and turning off the heat when you’ve reached your personal ideal. Then you can write it on the back of a piece of errant junk mail and pass it down for generations, just as every Italian grandma has done for centuries.

3 Garlic Cloves minced
1 teaspoon Salt
1/4 teaspoon Pepper
1 Tablespoon Sugar

Sauté for 10 minutes to let the flavors blend.

Variations for Sauce:

Instant Pot Ribs

Instant Pot Ribs
Found https://tastesbetterfromscratch.com/instant-pot-ribs/

Prep Time 10 mins
Cook Time 1 hr
Total Time 1 hr 10 mins

Tender, flavorful, and delicious Instant Pot Ribs, cooked in just about 30 minutes! A great, easy meal made with your pressure cooker.

Servings: 6
Calories: 219 k cal
Author: Lauren Allen

Ingredients
1-2 racks pork ribs (*see note below)
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon light brown sugar
1 cup water
1/2 cup apple juice , or 1/4 cup apple cider vinegar
1 teaspoon liquid smoke , optional*
1 cup barbecue sauce , homemade or store-bought (*see note)

Instructions
Remove membranes from the back of ribs, if needed.
Rubs seasonings over both sides of ribs.

Place wire trivet rack in the bottom of the instant pot.
Add water, apple juice (or apple cider vinegar) and liquid smoke (optional, but recommended for that great smokey flavor).
Place the ribs upright, with the meat side facing out. If you’re using one large rack of ribs, then circle them around the pot.
Secure lid and close vent.
Press “manual” or “pressure cook” and cook on high pressure for 25 minutes.
When the timer beeps, allow the pressure to naturally release for 15 min, then turn the valve to quick release.

Carefully remove ribs to a large, foil-lined baking sheet and slather them in BBQ sauce.
Optional: broil them in the oven for 2-3 minutes to caramelize the bbq sauce.

Recipe Notes
*For spare ribs, add 5-10 minutes to the cooking time (high number for higher altitudes and very “fall-off-the-bone” ribs, lower number for lower altitude and tender ribs).

*Liquid smoke can be found near the bbq sauces at your local grocery store. It will add an amazing smokey flavor to the ribs.

Quick Low Carb Sugar-Free Shrimp Cocktail Sauce and Homemade Tomato Ketchup

Quick Low Carb Sugar-Free Shrimp Cocktail Sauce

December 21, 2016 by Brenda

Brenda’s Notes:

While the recipe does not include any sugar added, there are natural sugars in tomatoes within the salsa and ketchup which is why you see 1 gram in the nutrition info.
Read labels when purchasing store bought salsa as many do in fact include sugar.

Healthier Homemade Tomato Ketchup

May 6, 2013 by Brenda 42 Comments

It’s just the right texture and as smooth and luscious as what the kiddies are used to. You can increase the honey to 1/2 a cup if you think the family needs it as sweet as store bought ketchup. With the amount I used my kids liked it this way just fine, but it’s definitely not as sweet as bottled ketchup.

Typically on a bottle of ketchup a serving is only 1 tablespoon, but who has only a tablespoon of ketchup, ever?

 Notes on Sweetener:

You could substitute maple syrup for the honey or for a sugar free alternative you could sub erythritol or 1 tablespoon of powdered stevia.

UPDATE: I’ve made this in the blender without cooking anything on the stove but I eliminated the fresh onion and used some dried minced instead. I also skipped the honey and used erythritol to sweeten it. Using the blender and you can make this faster anytime you want. You can certainly still make it on the stove and I do think it provides a better mingling of flavors but in the blender is great for when you run out and have no time!

Shrimp with Lemon Pepper Sauce:

found here http://www.redlobster.com/kitchen/recipes/recipe.asp?recipe=lpss
Serves 4

Lemon Pepper Sauce:

1 tbsp Shallots, minced
2 tsp Garlic, minced
¼ c white wine
½ c lemon juice
1 c heavy cream
1 stick (1/4 pound) butter
2 tsp garlic pepper seasoning
½ tbsp Olive Oil
8 oz Shrimp, peeled and divined

Preparation:

Lemon Pepper Sauce:

In a small non–reactive sauce pan add the garlic, shallots, wine and lemon juice. Bring to a boil and reduced heat. Simmer until liquid has evaporated and is reduced by 2/3.

In another small sauce pan add the heavy cream. Bring to a boil and reduce by half.

While liquids are reducing, cut the butter into small pieces. Let sit so butter can soften.

Once liquids are reduced, remove from heat. Strain lemon mixture and add to heavy cream.

Keeping pan warm on the burner after turning it off, slowly add 2-3 pieces of the butter to the lemon cream mixture, using a whip constantly. Continue to whip while adding the butter.

Season with the garlic pepper seasoning.

Sauté Shrimp:

Heat a large nonstick skillet over medium high heat.

Sauté the Shrimp and Olive Oil, until the Shrimp is cooked through, 3-5 minutes.

Add the Lemon Pepper Sauce, stir well and serve immediately over your favorite fresh fish.
Chef’s Tip:

You can serve this sauce over your favorite fish, whether it is sautéed, baked or broiled

Homemade Taco Seasoning

Homemade Taco Seasoning {recipe}
Author: Donielle
Recipe type: Sauces, Seasonings, and Condiments

Ingredients
2 Tbsp chili powder
5 tsp paprika
4 tsp cumin
3 tsp onion powder
2 tsp garlic powder
1 tsp salt
just a dash a cayenne pepper

Method of Preparation
Mix all ingredients together in a jar and shake them to mix. I normally use about half this mixture for each pound of beef we use, but start with a couple tablespoons and go from there to match your own taste!

Notes Tips: Depending on the chili powder you use, you may need more or less than the 2 Tbsp. I bought some expensive stuff once and it was a lot spicier than the cheaper store brand powder. So if yours is either really fresh or really potent, you may want to cut back a bit!

If your family is just getting used to eating less processed foods, try adding 1 tsp of organic cane sugar in with this mix so it seems more “normal” to them. Then back it out each time you make it. Soon enough, you won’t have any sugar in it and the package mixes won’t taste good at all!

Sauces

Wow I am so impressed with these finds!
First I started with a simple BBQ Sauce here:
http://www.themeaningofpie.com/2012/10/basic-bbq-sauce/

Basic Sauce:
1 can (15 ounces) tomato sauce
½ cup distilled white vinegar
½ cup brown sugar
¼ cup Worcestershire sauce

My Add-Ins:
1 teaspoon ancho chile powder
¼ teaspoon Tabasco sauce
½ teaspoon onion powder
¼ teaspoon garlic powder

Combine all of the ingredients in a saucepan. Simmer for 20 to 30 minutes to allow the sauce to thicken. If you desire a thicker sauce, at this time you can stir in a cornstarch slurry (1 teaspoon cornstarch mixed into just enough cold water) and simmer for an additional three minutes. Serve warm.

and ended up somehow in an article on the history of sauces
http://www.amazingribs.com/BBQ_articles/history_of_bbq_sauce.html
and then perused a number of articles on types and regions of sauces and became even more with other articles as I explored the site. I particularly like this article on board sauce developed by Adam Perry Lang which I had never heard of before but sounds amazing. I can't wait to try it!
http://www.amazingribs.com/recipes/other_fun_sauces/board_sauces.html

Makes: Dinner for 2
Takes. 30 minutes
Ingredients
2 pounds of steak (this is perfect for flank steak)
6 tablespoons high quality extra virgin olive oil
5 large fresh sage leaves
2 tablespoons fresh thyme leaves, stripped from the stems
1 medium clove of garlic
1/2 fresh red jalapeño
1/4 teaspoon coarsely ground black pepper

Do this

1) Salt the steaks about 1 hour before cooking and put them in the fridge. The salt pulls liquid out of the meat, and that liquid is then pulled back into the meat where it can diffuse deep down into the muscle so you get salt into the meat, not just on top of the meat.

2) Before the meat goes on the grill, coarsely chop the sage, thyme, garlic, jalapeño, and black pepper, together in a pile in the center of the cutting board. Drizzle 2 tablespoons of oil on the pile and chop some more so the oil and salt can draw out some of the flavor.

3) Grill the steaks until dark on the outside and medium rare in the center. Try not to go beyond 130°F in the center of the steaks so there are juices running when you cut the meat. For steaks under 1" I recommend hot and fast with the lid open, turning frequently. For thicker steaks, I recommend set up the grill in 2 zones. Warm the meat slowly on the indirect side with the lid down until it hits about 120°F, and then move it to the hot side to sear it and brown the surface. This is called the reverse sear and it produces the most even colored interiors.

4) When the steaks are almost ready, pour the rest of the oil onto the herbs, mix, and spread it around into a circle about 6" diameter. Place the steaks on the oiled herbs and coat both sides. Do not let the meat rest to reabsorb the juices, start cutting immediately. Let the juices run!

Cut slices of tender meats about 1/2" thick across the grain, and tougher meats like flank steak, about 1/8" across the grain. Roll the meat in the board dressing so everybody gets a light coat.

Grilled Red Pepper Salsa

Grilled Red Pepper Salsa from The Meaning of Pie
http://www.themeaningofpie.com/2012/05/grilled-red-pepper-salsa/#more-5546

You can do this on a grill or over a gas burner with a grill basket. I did the latter. I also spread a sheet of aluminum foil around the burner to catch any drips. It is not strictly necessary, but it helps with the clean up. It had never really occurred to me to use this grill pan indoors. I may be ruining it. But I got tired of my peppers dropping off of the grates of my stove top. When I multi-task inappropriately in the kitchen, I like for my burning vegetables to burn evenly and not drop into the flame.

You really need to let the pan cool down after using it or use mitts. I’m not sure but I’m guessing the makers of these weren’t envisioning them being used on a stove top, but who knows?

The idea here is to char the vegetables as you cook them and then toss them all together in the food processor, char and all. Let them cool a bit before doing so, though. There will be little flecks of black in the salsa, but that is entirely the point. It gives the salsa an interesting depth. By the way, if you do not like red bell peppers, this is not a good substitute for regular salsa…because it tastes curiously like red bell peppers…since it is full of red bell peppers.

I also think this would be awesome with the addition of some grilled and stripped corn.

Preparation:
3 roma tomatoes, halved
½ medium onion, sliced thickly, rings held together with a toothpick
3 cloves of garlic, peeled
2 red bell peppers, seeded and sliced into thick flat strips
2 serrano peppers, halved and seeded
½ teaspoon kosher salt
½ lime juiced

Grill the tomatoes for approximately 4 minutes per side, or until they have nice black marks but have not turned into mush. Grill the peppers, onions and garlic for about 7 or 8 minutes per side or until they are charred and slightly softened.

Remove the vegetables to a bowl as they are finished. When all of the vegetables have been cooked, allow them to cool in the bowl for at least 5 minutes before transferring them to a food processor. Process the vegetables until they are uniformly processed but still slightly chunky.

Stir in the lime juice and the salt and then taste to determine whether you would like more seasoning. The lime juice and salt seem like an afterthought but they are critical to the balanced flavor of the salsa.

Serve with chips. Serve on eggs. Eat straight from the bowl with a spoon. Note: I have been getting some very hot serrano peppers this year. It would behoove you to take a little taste and determine the number of peppers you want accordingly. You may also substitute jalapenos for the serranos.
