Chicken Tinga Tostadas with Avocado Crema

 Makes 8 tostadas.

Note: Frying or baking your own tostada shells is quick and easy to do, but premade shells can be found in the global section of most grocery stores. From Meredith Deeds.

• 1 1/2 lb. boneless, skinless chicken thighs

• Salt and freshly ground black pepper

• 1 tbsp. vegetable oil

• 1 small onion, chopped

• 3 garlic cloves, finely chopped

• 1 tbsp. chili powder

• 1 tsp. ground cumin

• 1 (15-oz.) can diced fire-roasted tomatoes

• 1 chipotle chile in adobo (from a 7-oz. can)

• 3 tbsp. lime juice, divided

• 1 medium avocado, pitted, peeled and mashed

• 1/4 c. sour cream

• 2 c. thinly sliced cabbage

• 1/4 c. chopped cilantro

• 8 tostada shells, warmed (see Note)

• 1 (15-oz.) can refried beans, warmed

• 1/2 c. crumbled Cotija cheese

• Lime wedges

Directions

Season the chicken thighs with 3/4 teaspoon salt and pepper.

In a large skillet (with a cover), heat oil over medium-high heat. Add the chicken and cook for about 2 to 3 minutes per side, until browned. Transfer to a plate. Reduce heat to medium and add onion to the skillet. Cook, stirring, until softened, about 3 minutes. Add garlic, chili powder and cumin and cook, stirring, for 1 minute. Add 1/4 cup of water and cook, scraping the bits from the bottom of the skillet, until liquid has evaporated. Remove from heat and transfer onion mixture to a blender. Add tomatoes and chipotle chile to the blender and pulse until puréed.

Pour sauce back into the skillet and bring to a simmer over medium heat. Add chicken and turn to coat. Reduce heat to low and cook for 15 to 20 minutes, until the chicken is cooked through. Remove chicken from the sauce and transfer to a cutting board. Let cool slightly and use two forks to shred the chicken.

While the chicken is cooling, bring the sauce in the skillet to a boil over medium heat. Cook, stirring frequently, for 4 to 5 minutes, until the sauce has reduced and thickened. Return shredded chicken to the sauce, add 1 tablespoon lime juice and cook, stirring, until heated. Keep warm.

In a medium bowl, whisk together the avocado, sour cream and 1 tablespoon lime juice. Season with a pinch of salt.

In another bowl, combine cabbage, cilantro and remaining 1 tablespoon of lime juice.

To assemble the tostadas, top each tostada shell with refried beans, chicken, cabbage mixture, avocado crema and Cotija. Serve with lime wedges on the side.

extra virgin olive oil

big pinch salt

2 scant Tablespoons Lemon Pepper Seasoning

Instant Pot Chicken Alfredo

INSTANT POT CHICKEN ALFREDO PASTA
by Melissa

Instant Pot Chicken Alfredo
– Flavorful chicken breasts, garlic, penne, real cream and real parmesan cheese. The best part is it all cooks together in the Instant Pot.

This Instant Pot Chicken Alfredo Pasta is so delicious and so easy to make, this is definitely going to be one of your go-to Instant Pot dinners! This recipe is a variation of the One-Pan Chicken Alfredo I developed in 2013. That is still one of my family’s favorite recipes, and truly a reader favorite too!

HOW TO MAKE INSTANT POT CHICKEN ALFREDO
Start by searing the chicken breasts on high Saute mode. You select high Saute mode by hitting Saute, then hit adjust until the indicator light shows More. Then remove the chicken breasts, add minced garlic to the Instant Pot and sauté for about a minute. Follow with chicken broth, heavy cream, uncooked penne pasta, salt and pepper, as well as the chicken breasts. Lock lid and cook on Manual Mode, High Pressure for 6 minutes. Quick Pressure Release and set aside chicken breasts to rest before slicing. Gradually stir in freshly grated parmesan cheese.

CHICKEN ALFREDO INSTANT POT TIPS
Pasta should go into the Instant Pot uncooked. You can use any shape of pasta as long as it is similar in size.
Preshredded parmesan cheese does not melt very well and will cause your sauce to be thin and clumpy. Use a microplane to grate parmesan straight off the block for the best results.
Use heavy cream, not whipping cream. Whipping cream is thinner with less fat and will cause the sauce to be too thin. If you can only find whipping cream, use more parmesan cheese to adjust thickness.
Sauce will continue to thicken as it cools.

Chicken Pot Pie

Found here https://www.todaysparent.com/recipe/make-ahead-meals/chicken-pot-pie-recipe/

PREPARATION TIME: 45 MIN
TOTAL TIME: 1 HOUR 45 MIN  PLUS
TIME: 1 HR TO BAKE FROM FROZEN
MAKES: 2 PIES (SERVES 4 TO 6 EACH)

Turn your sheet pan into a pie plate. This easy recipe makes two pies so you can enjoy one tonight and freeze the other for a night when you just can't.

Ingredients
1/3 cup butter
1 large onion , diced
1/2 cup all-purpose flour
2 cups reduced-sodium chicken broth
2 cups 2% milk
900 g Skinless, boneless chicken thighs , cut in chunks
2 large potatoes , cut in 1/2-in. cubes
1/2 tsp salt
1/2 tsp pepper
750 g (about 6 cups) bag frozen peas and carrots

Directions
Line two 9 x 13-in. baking dishes with heavy-duty foil, leaving 5 in. of overhang on all sides.

Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 min. Stir in flour and cook for 1 min. Gradually pour in chicken broth and milk while whisking, then bring to a simmer. Add chicken, potatoes, salt and pepper. Bring to a boil, then reduce heat and simmer over medium-low heat, stirring occasionally, until chicken is no longer pink and potatoes are tender, about 15 min.

Remove from heat, then stir in frozen peas and carrots. Divide mixture between prepared baking dishes.

To freeze: Let filling cool completely to room temperature, about 45 min. Wrap filling tightly with overhanging foil. Freeze until firm, at least 2 hours. Remove foil packet from baking dish, then wrap well with plastic wrap. Label and date, then return packet to freezer for up to 3 months.

To bake from frozen: Position rack in bottom third of oven and preheat to 400F. Remove plastic wrap and return foil packet to baking dish. Bake for 30 min. Roll out puff pastry on a lightly floured surface to the size of the baking dish. Unwrap foil and cut away overhang with scissors. Stir filling, then spread evenly. Place pastry on top, then cut slits with a paring knife and brush pastry with milk. Continue baking until pastry is golden brown and filling is hot in the centre (it should reach 165F with an instant-read thermometer), about 20 min. Let stand for 10 min before serving.

Kitchen tip
Want to enjoy this tonight? Place the pastry on top before baking (cutting slits in the top with a paring knife and brushing it with milk), and then cook in the oven for 25 minutes.

Instant Pot Chicken Marsala

Found https://tastesbetterfromscratch.com/instant-pot-chicken-marsala/
Chicken marsala that was made in the instant pot with chicken thighs and marsala wine, served on a white plate with sauce and mushrooms.

Prep Time 15 mins
Cook Time 40 mins
Total Time 55 mins

This easy Instant Pot Chicken Marsala recipe is one of the tastiest dishes I have made in my instant pot.  Perfectly cooked chicken thighs with cremini mushrooms cooked in a sweet marsala wine mixture and served with pasta or mashed potatoes.

Servings: 4
Calories: 273 kcal
Author: Lauren Allen

Ingredients
4 large skinless chicken thighs (About 3 pounds), bone in or boneless
1/2 cup all-purpose flour , for dredging
salt and pepper
3 Tablespoons olive oil , separated
8 ounces fresh cremini mushrooms , thickly sliced
3 green onions , chopped
2 cloves garlic , minced
1/2 cup low-sodium chicken broth
1/3 cup sweet Marsala wine
1/3 cup heavy whipping cream

Instructions
Select SAUTE on the Instant Pot, and add 2 tablespoons of olive oil to the instant pot.

Season the chicken on both sides with salt and pepper, and dredge them in flour.  Add chicken thighs to the hot oil and cook them for 3-4 minutes on each side, until golden brown.

Remove the chicken thighs to a plate. Add the last tablespoon of olive oil to the instant pot along with the mushrooms, green onions, and garlic. Saute for 2 minutes and then press CANCEL.

Add the chicken broth to pot, scraping up any browned bits from the bottom of the pan. Place the chicken thighs on top. Close the lid and turn the pressure valve to "sealing".

Cook on Manual/Pressure setting and cook for 10 minutes on high pressure. When the timer beeps, allow the pressure to naturally release for 12 minutes, before opening the lid.

Press cancel and remove the thighs to a plate. Cover them with tinfoil to keep warm.

Turn instant pot to SAUTE setting and add the marsala wine to the mushroom mixture. Bring the mixture to a boil and cook for 3 minutes.

Stir in the heavy whipping cream and cook for an additional 5 minutes or until the mixture is slightly thickened.

Spoon the sauce over chicken. Serve warm with mashed potatoes or egg noodles.

Recipe Notes
I HIGHLY recommend using chicken thighs, instead of chicken breasts for this recipe because they cook so much better in the instant pot.

CHICKEN AND BROCCOLI STIR FRY

CHICKEN AND BROCCOLI STIR FRY
FOUND https://www.spendwithpennies.com/chicken-and-broccoli-stir-fry/
SERVINGS: 4 SERVINGS

PREP TIME: 10 MINS
COOK TIME: 15 MINS
TOTAL TIME: 25 MINS

Tender chicken and broccoli tossed in a deliciously simple stir fry sauce.

INGREDIENTS
1 1/2 tablespoon light flavored olive oil or coconut oil, divided
1 medium onion, sliced into thin strips, about 1 1/2 cups
4 garlic cloves, minced
1 1/2 lb boneless skinless chicken thighs, cut into 2 inch pieces
1 1/2 teaspoons cornstarch
1/3 cup low-sodium soy sauce
2 tablespoons honey
1 tablespoon chili paste
3 cups bite-sized broccoli florets
cooked rice for serving, optional

INSTRUCTIONS

Heat a large stainless steel skillet over medium-high heat. Add 1/2 tablespoon of oil, and let it warm for a few seconds. Add the onion strips and let them cook for 2 minutes. Add the garlic and stir. Push the garlic and onion to the outside of the pan.

Pour the remaining oil in the center of the skillet. Add the chicken. Spread across the skillet and sprinkle with cornstarch. Cook without stirring for 2 minutes, until browned, and then use a sturdy metal spatula to lift and flip each piece of chicken. Cook for 1 minute.

While the chicken is cooking, stir together the soy sauce, honey, and chili paste. Add the sauce to the skillet and stir to combine.

Add the broccoli on top of the other ingredients and cover with lid. Cook for 2 minutes. The broccoli should be bright green and barely softened. Remove the lid and stir, scraping up any bits of sauce or meat from the bottom of the skillet. Simmer 1 minute to thicken the sauce, stirring frequently. Serve on its own or over rice, if desired.

MAKE-AHEAD DIRECTIONS
Store this in an airtight container for up to 3 days. Reheat in the microwave or on the stove. This can be stored in one large container or portioned into individual servings for storage and reheating.

RECIPE NOTES
Boneless skinless chicken breasts may be substituted for the thighs in this recipe. However, breasts will cook faster, so take care not to overcook.
