Peanut Butter Eggs

Peanut Butter Eggs...
1 lb. (about 3 1/2 cups) powdered sugar
1 1/2 cups peanut butter
4 oz. cream cheese
1/2 cup butter or marg, softened
1/2 tsp. vanilla

Mix together with hands until thoroughly blended. Shape into eggs. Chill until firm. Dip in chocolate coating.

To melt chocolate for coating, a crockpot on low heat works well. It keeps the chocolate at a uniform heat.

Crispy Crab Nuggets

1 pound fresh crab meat
3 slices of white bread, crust removed or packaged bread crumbs
1 egg beaten
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 tablespoon Old Bay Seasoning
1 tablespoon parsley

Put breadcrumbs in food processor so they are chopped up fine(to save time). In a large bowl, mix together egg, mayonnaise, mustard, Worcestershire sauce, parsley, and Old Bay seasoning. Add breadcrumbs and crab meat and mix by hand to avoid breaking up too many of the lumps. You may need to break up the very large lumps however so the crab balls will stay together. Shape into 24 balls and fry in batches in hot oil until golden brown, turning once. Drain on paper towels. Serve with your favorite sauce or don't use any! These are so good!

Breaded and Baked Chicken Drumsticks

Breaded and Baked chicken Drumsticks
(makes 4-6 servings)

Ingredients

1/2 cup flour
1 tablespoon paprika
2 teaspoons black pepper
1 teaspoon salt
2 eggs
2 teaspoons Worcestershire sauce
1/2 teaspoon lemon juice
3/4 cup dry breadcrumbs
1/4 cup fresh shredded Parmesan cheese
1 tablespoon herb season blend (your choice. We like using a simple Italian Herb blend)
6 chicken drumsticks
Olive oil
Directions

Preheat the oven to 425F. Coat the bottom of a roasting pan or baking sheet with a thin layer of olive oil.
Mix together the paprika, flour, black pepper and salt in one bowl. In another, beat together the eggs, Worcestershire sauce and lemon juice. In a third bowl, combine the breadcrumbs, Parmesan cheese and herb season blend.
Pat the chicken dry with a paper towel, then dredge in the flour mixture, turning to coat. Next, dip the drumsticks in the eggs, making sure they get coated before finally dredging in the bread crumbs, making sure they are nice and coated. Place the chicken immediately on the prepared baking sheets.
Bake for 20-25 minutes, or until cooked through and the juices run clear (not pink) when poked with a sharp knife.

Tart Cherry Spritzer

This recipe makes 10 - 4 oz - 35 Calorie Servings with 1 g Protein

INGREDIENTS:
2 cups no-sugar-added tart cherry juice blend (any brand)
1 cup frozen pitted sweet cherries
½ cup lemon juice
¼ teaspoon ground ginger (or up to 1 tablespoon fresh grated ginger)
3 cups sparkling water (preferably cherry flavored)

PREPARATION:
Puree cherry juice, frozen cherries, lemon juice and ginger in a blender until completely smooth. Transfer to large pitcher and add sparkling water and plenty of ice.
Pour 4 ounces and enjoy.

Lazy Fajitas


2 or 3 chicken breasts
3 bell peppers of any color
1 or 2 onions of any color
1 package fajita seasoning

olive oil

Cut it all up, place on foil lined baking pan with lip. Coat with olive oil and sprinkle fajita seasoning or whatever you like on it and bake at 425 for 20 to 25 minutes. Place under broiler for last minute or two to make them beautiful.
