HOMEMADE RANCH DRESSING MIX

INGREDIENTS:

1/2 cup buttermilk powder
2 tablespoons parsley
1 teaspoon dill
1 tablespoon onion powder
2 teaspoons onion flakes
1 1/2 teaspoons garlic powder
3/4 teaspoon salt
1/2 teaspoon pepper
2 teaspoons chives


DIRECTIONS:
In a small food processor (I use the magic bullet), blend together the buttermilk powder, 1/2 of the dill and 1/2 of the parsley.
Stir in all remaining ingredients by hand. Place in an air tight container and store up to 6 months.

TO MAKE DRESSING
Add 3 tablespoons ranch mix, 1/2 cup mayonnaise, 1/2 cup sour cream and 3/4 cup milk. Stir until well combined and refrigerate at least 20 minutes before serving.

TO MAKE DIP
Combine 2 tablespoons ranch mix, with 1/2 cup mayonnaise & 1/2 cup sour cream. Add up to 1/2 cup milk to reach desired consistency. Stir will and refrigerate at least 20 minutes before serving.

TO REPLACE 1 ENVELOPE OF RANCH DRESSING MIX POWDER
Use 2 tablespoons in place of 1 packet of ranch mix.

Green Herb Salsa

Found in the NYTimes Cooking Section

INGREDIENTS
1 cup finely chopped parsley (1 3/4 ounces/50 grams)
1 ½ teaspoons finely grated lemon zest (from 1 small lemon)
¼ to ½ teaspoon salt, more to taste
⅔ cup extra-virgin olive oil
1 garlic clove
2 tablespoons red wine vinegar, more to taste

PREPARATION
Combine parsley, zest, salt and olive oil in a medium mixing bowl. Use a rasp grater to finely grate garlic into the bowl. Stir to combine.
Just before serving, stir in vinegar. Taste and adjust salt and acid as needed. (Acid will dull the vibrant flavor and color of the herbs over time, so if you plan to store some of the sauce for future use, add acid to only the portion you’re using. Sauce, without vinegar, will keep in the refrigerator up to 2 days; bring to room temperature before using.)

Tips
To vary the herbs, substitute half the parsley with basil, mint, marjoram or cilantro. Spoon basil salsa over poached eggs; mint or marjoram salsa over grilled fish; and cilantro salsa over beans and grilled corn.
To make the chef Travis Lett's green olive and preserved lemon tapenade, add 3 tablespoons roughly chopped, pitted Picholine or Lucques olives and the minced rind of half a rinsed preserved lemon. This version pairs particularly well with grilled fish and shellfish.
To make Italian salsa verde, add 8 anchovy filets, rinsed (if salt-packed) and finely chopped, and 2 teaspoons capers, rinsed and finely chopped. Serve alongside grilled chicken, steak or braised beef. Drizzle over boiled green beans, carrots and turnips. Spoon over hard-cooked eggs for a simple appetizer.
To make Moroccan chermoula, substitute cilantro for the parsley and lime juice for the vinegar. Omit the lemon zest and add 1 tablespoon finely grated fresh ginger, 1/2 teaspoon ground cumin and 1/2 jalapeño pepper, finely minced. Serve alongside grilled lamb or pan-fried chicken breasts. Use as a marinade for chicken, sole, tuna or halibut. Spread onto turkey sandwiches.
Or to make chimichurri, add a little finely chopped chili, and a finely chopped shallot or two, and maybe some oregano. Great with grilled steak.

The Martha Stewart Version

INGREDIENTS

1/4 cup blanched almonds, toasted
1 small garlic clove
1 cup fresh parsley leaves
1/2 cup fresh cilantro leaves
1/2 cup fresh basil leaves
2/3 cup extra-virgin olive oil
1/8 teaspoon red-pepper flakes
Coarse salt and ground pepper
2 teaspoons white-wine vinegar or white balsamic vinegar

DIRECTIONS

Using a chef's knife (or food processor) finely chop almonds, garlic, and herbs. Stir (or blend) in oil and red-pepper flakes. Season with salt and pepper. (To store, refrigerate, up to 1 day.) Stir in vinegar just before serving.
COOK'S NOTES
Feel free to include any type of soft green herb, such as oregano, chives, and mint. You can also substitute pistachios, walnuts, or pine nuts for the almonds. If you use a food processor, the sauce will have a thicker texture.

Ranch dressing

Ranch dressing
1 cup well-shaken buttermilk
1/4 cup mayonnaise
3 tablespoons sour cream
3 tablespoons finely chopped Italian parsley
2 tablespoons finely chopped chives
4 teaspoons white wine vinegar or lemon juice
1 medium garlic clove, finely chopped
1/2 teaspoon kosher salt, plus more as needed
1/8 teaspoon freshly ground black pepper, plus more as needed

INSTRUCTIONS
Place all of the ingredients in a 2-cup Mason jar or other containers with a tight-fitting lid.
Seal tightly and shake to evenly distribute all the ingredients. Taste and season with additional salt and pepper as desired. Refrigerate until chilled and the flavors have melded about 1 hour. The dressing will last up to 3 days in the refrigerator.

CREAMY AVOCADO VINAIGRETTE

This creamy avocado vinaigrette is healthy, delicious, and ready in less than five minutes.

MAKES: 1 CUP DRESSING

INGREDIENTS
1 ripe avocado
¼ cup white wine vinegar
Juice of one lemon
Salt and pepper, to taste
¾ cup extra virgin olive oil

INSTRUCTIONS

In a food processor, combine avocado, vinegar, lemon juice, salt, and pepper. Run processor until very smooth and creamy.

With processor running on low, stream in olive oil through the shoot until just combined.

NOTES
Some people have said that this recipe is way too tart for their tastes. I've retested the recipe times and reworked it to make it a bit less tangy.

Olive Garden Salad Dressing Copy Cat

Serves: 10

Olive Garden Salad Dressing
You don't need to leave home, you can make salad dressing that tastes just like the Olive Garden tonight.

Ingredients

Ingredients
1/2 cup mayonnaise
1/3 cup white vinegar
1 teaspoon vegetable oil
2 tablespoons light corn syrup
2 tablespoons grated Parmesan cheese
2 tablespoons grated Romano cheese
1/4 teaspoon garlic salt, or 1 garlic clove, minced
1/2 teaspoon dried Italian seasoning
1/2 teaspoon dried parsley flakes
1 tablespoon lemon juice
Sugar (optional)

Directions

Combine all the ingredients in a blender until well mixed. If this is a little too tart for your own personal taste, add a little extra sugar. You can enjoy your Olive Garden salad dressing for up to 10 days if you store it in an airtight container in the refrigerator.

Additional Notes

Another great use for the Olive Garden salad dressing is as a marinade for vegetables or even meats that you might like to grill. So you can see the Olive Garden salad dressing can be used in more than one way.

Makes: 8-10 servings

Ingredients:

2 egg yolks
3 tablespoons tarragon vinegar, divided
1 teaspoon corn syrup (or sugar), divided
1 1/4 cup light oil (safflower or soybean), divided
¼ cup of white vinegar
1 tablespoon of Italian seasoning
½ tablespoon of parsley
A pinch of salt
A grind of black pepper
½ teaspoon of dry Romano cheese
⅛ teaspoon of xanthan gum
½ teaspoon of garlic powder

Directions:

Combine egg yolks, 1 tablespoon tarragon vinegar, and a half teaspoon corn syrup in a small bowl. Whisk by hand until smooth.

Slowly incorporate ¾ cup light oil into mix while whisking. Set this "homemade mayo" mixture aside.

Combine 3/4 light oil, 1/4 cup light vinegar, two tablespoons of tarragon vinegar, and the remaining ingredients in a medium sized bowl. Add a half tablespoon of the "homemade mayo" mixture.

Stir to combine

Shake and refrigerate for at least 10 minutes.

Serve on a fresh salad, and enjoy!

Copycat Salad Dressing

People who know me, know I love salads with stuff. No plain lettuce wedge for me even the wedge with good blue cheese screams for at least tomato and cucumbers but I love Greek and Italian Salads the most! So many options, olives (black and Kalamata), capers, peppers of all colors, cauliflower, green onions, red onion, croutons, bacon bits, hard boiled eggs, tomato, raddishes, and cucumbers, even anchovies. Yum! You don't have to use all of these every time but the more stuff the more I like it.

But doesn't everyone go to Olive Garden just for the salad? I have looked for this recipe online for a long time and now I found it through looking for Christmas Cookie Recipes...LOL

Copycat Olive Garden Salad Dressing

Yield: 1½ cups dressing

Ingredients
1 packet Good Seasonings Italian Dressing Mix
¾ cup oil (vegetable/canola)
¼ cup plus 2 Tbsp white vinegar
¼ cup water
½ tsp sugar
½ tsp dried Italian seasoning
½ tsp salt
¼ tsp pepper
¼ tsp garlic powder
½ Tbsp mayonnaise (not miracle whip)

Instructions
Combine all ingredients in a bowl. Whisk briskly so that there are no clumps of mayo. Keep refrigerated.

Olive Garden Salad Dressing

Lets be real who doesn't love their salad dressing but do I really have to buy corn syrup??? Hmmm maybe if I use Miracle Whip.

 Olive Garden Salad Dressing
 1/2 C. mayonnaise
1/3 C. white vinegar
1 tsp. vegetable oil
2 Tbsp. corn syrup
2 Tbsp. Parmesan cheese
2 Tbsp. Romano cheese
1/4 tsp. garlic salt
1/2 tsp. Italian seasoning
1/2 tsp. parsley flakes
1 Tbsp. lemon juice

One of the best things about the Olive Garden is their never-ending salad bowl. They sell the house dressing right there at the restaurant, but I thought it would be easier (and more frugal) to try and duplicate the Olive Garden salad dressing at home. A quick internet search turned up dozens of recipes, most of which were exactly like the one above.

 What’s nice about the Olive Garden salad dressing recipe is that the ingredients are readily available. In fact, you may already have them in your refrigerator/pantry. Toss with fresh tomatoes, Vidalia onions, black olives, croutons, pickled pepperoncini and freshly grated Parmesan cheese to give you a true Olive Garden restaurant experience.

2 Tbsp dried parsley

Instructions
Place all ingredients in a bowl and mix.
Place your mix in a baggie or mason jar.
Print instructions on bag with Sharpie using making tape or other tape if desired

For Ranch Dressing
Whisk – 1 Tablespoon of Mix + 1/3 Cup of Mayonnaise ( or 1/3 cup non fat Greek yogurt) + 1/4 Cup of Milk + Salt to taste

You can use the ranch mix to make Ranch Dip by mixing in sour cream.

Sheila's Salad Dressing Collection

Gourmet Mag. Salad Dressings

CARROT GINGER DRESSING

1/2 lb carrots (3 medium), coarsely chopped
1/4 cup chopped peeled fresh ginger
1/4 cup chopped shallots
1/4 cup seasoned rice vinegar
1 tablespoon soy sauce
1 tablespoon Asian sesame oil
1/8 teaspoon salt
1/2 cup vegetable oil
1/4 cup water
Pulse carrots in a food processor until finely ground (almost puréed).
Add chopped ginger, chopped shallots, rice vinegar, soy sauce, sesame
oil, and salt and pulse until ginger and shallots are minced.

With motor running, add vegetable oil in a slow stream.Transfer
mixture to a blender. Add 1/4 cup water and blend until smooth, 2 to
3 minutes. Thin dressing with additional water if desired.

Cooks' note: Dressing keeps, covered and chilled, 1 week.
Makes about 2 cups


STILTON DRESSING

2/3 cup crumbled Stilton (from a 6- to 7-oz wedge, rind discarded)
1/4 cup sour cream
1/4 cup water
2 teaspoons white-wine vinegar
1/4 teaspoon black pepper
2 tablespoons finely chopped fresh chives

Coarsely mash Stilton with a fork in a bowl. Stir in sour cream,
water, vinegar, and pepper until combined well, then stir in chives.
Season with salt if desired.

Cooks' note: Dressing keeps, covered and chilled, 3 days.
Makes about 1 cup.
