Ultra Fudgy German Chocolate Brownies

These German Chocolate Brownies are the BEST! Ultra fudgy brownies topped with a gooey coconut pecan frosting. Tastes just like the classic cake recipe but in a fudgy brownie!

Ultra Fudgy German Chocolate Brownies

These ultra fudgy, super chocolaty German Chocolate Brownies combine classic cake flavors with an easy brownie recipe!

Ingredients

FOR BROWNIES:
1 and ¼ cups butter, cubed
12 oz semi-sweet chocolate bars, roughly chopped
4 oz bittersweet chocolate, roughly chopped
3 cups sugar
5 eggs
1 Tbsp vanilla
2 & ¼ cups all-purpose flour
1 tsp instant espresso powder
Pinch salt

FOR COCONUT PECAN FROSTING:
2 cups evaporated milk
2 cups sugar
5 egg yolks
2 sticks (1 cup) butter, cubed
1 Tbsp vanilla extract
1 cup chopped pecans
2 cups shredded coconut

Instructions
Preheat oven to 350 degrees F. Line a 13x9" baking pan with foil, extending the edges of the foil over the sides of the pan. Spray the foil liberally with cooking spray; set aside.
In a large microwaveable bowl, melt together the cubed butter, semi-sweet chocolate & bittersweet chocolate on HIGH for 45 seconds. Stir, then heat for another 25-30 seconds or until melted and glossy. Set aside.
In the bowl of a stand mixer, beat together the sugar, eggs and vanilla until pale yellow and fluffy, about 1 minute. Pour in the chocolate mixture and mix to combine. Add in the flour, espresso and salt and beat until a soft batter has formed. Pour the batter into the prepared pan and spread in an even layer; batter will be thick.
Bake for approx. 37-45 minutes or until a toothpick inserted near the center comes out clean or with moist, not wet, crumbs. Cool completely.
While brownies cool, make your frosting. In a large saucepot, bring together the evaporated milk, sugar, egg yolks, cubed butter, and vanilla over medium heat until melted. Bring the mixture to a bubble/boil and, stirring constantly, boil for 12 minutes exactly or until thickened. Remove from heat after 12 minutes and stir in the coconut and chopped pecans. Cool for about 15 minutes.
Spread the frosting evenly over the brownie layer. Cover with plastic wrap and refrigerate for about 2 hours or until set. The pan will weigh approximately 4584 pounds; this is normal. Cut into squares and serve.

Brownies A La Anytime.

Yeah, this recipe is a keeper.   Hot, gooey, dark chocolatey brownies in a few short minutes using the microwave and simple ingredients???   We’ll call them Brownies A La Anytime.…

At the very last moment I decided that I wanted to add baking powder, so this guy didn’t make it into the photo, but he made it into the brownies.   The ingredients are as follows.  This will make one generous serving.   It could be shared, if you are feeling generous, but I won’t judge you if you keep it all to yourself.

Brownies A La Anytime

4 Tablespoons Flour
3 Tablespoons Sugar
Pinch Of Salt
1/8 teaspoon Baking Powder
2 Tablespoons Cocoa Powder (I prefer Hershey’s Dark Cocoa Powder)

1 Tablespoon Melted Butter
1-2 Tablespoons Oil (such as vegetable, canola or coconut)
1 Tablespoon Water
1/4 Teaspoon Vanilla

You can top with a few chocolate chips or nuts if you like.

Melt your butter in a microwave safe bowl or cup (took me about 12 seconds).   Add the oil to your melted butter and mix well.  If you want a moister brownie, go for the full two tablespoons.  I prefer a really solid, dense brownie (which I top with ice cream adding a lot of moisture) so I use one tablespoon of oil.   Add in your vanilla and water, stir well to combine.    In a separate bowl or cup, combine all dry ingredients.

As I said, I used only one tablespoon of oil, so my mix is a bit on the drier/firm side.   I pressed it into my ramekin.   You could also use a mug, microwaving things in a mug seems to be the popular thing, but being a non-coffee drinker (hello, Diet Coke!), I have more ramekins than I do mugs.

I added a few chocolate chips to the top.


I started with 45 seconds in the microwave and ended up cooking mine for about one minute and ten seconds.  That’s 70 seconds people – until hot, gooey, delicious, dark, sweet chocolate goodness.   SEVENTY SECONDS!   That’s like magic!

Crockpot Halloween Candy Leftover Brownies

Not sure what to do with all that Halloween candy? This is a great recipe to get rid of the leftover candy without just throwing it away. –

Slow Cooker Leftover Halloween Candy Brownies. (You can even freeze the chocolate candy and use as needed for this yummy recipe!)

1 box of brownie mix
1 cup of candy pieces, chopped into pieces (like peanut butter cups or candy bars)

Make brownie mix as directed on package. (alternatively, you can use your favorite homemade brownie recipe)

Generously coat a 4-5 Quart slow cooker with non-stick cooking spray or use a slow cooker liner.

Pour in half of the brownie batter and spread gently to smooth out.

Layer the candy pieces over top the brownie mix.  (I’ve used peanut butter cups, candy bars, or M&Ms)
Pour in the remaining brownie batter and smooth to completely cover candy.

Cover. Cook on LOW for 2-3 hours or until a toothpick comes out clean. (It’s okay to check for doneness at 2 hours but resist the urge to keep taking the lid off – it will let all the heat escape and the brownies will take forever to cook!)

Let cool, uncovered, for 15 minutes. Remove insert from cooker and invert to remove brownies, or let cool completely in crock then cut into 12 squares.

If you’d like, serve with vanilla ice cream or whipped cream!

Mix, mixes and DIY

Brownie Mix:

8 cups sugar
6 cups flour
2 cups cocoa powder
1 1/2 Tbsp baking powder
1 Tbsp salt

To Make: (this is the recipe that is on the tag) (just lightly mix the ingredients, if you beat them a lot it gets too much air in the eggs and gives more of a cake-like texture.)

2 1/4 cups brownie mix
2 eggs beaten
1/3 c melted butter 2 tsp vanilla

Pour into an 8x8 " pan. Serves 8-9 (these brownies are quite thick- about 2"-- if you want them thinner place them in an 9 x 13 pan. They will be about 1/2-1" thick then)

Bake for 30-35 min at 350 degrees. (25-30 min. for the 9x13 pan- serves 12-15)

All Purpose Quick Mix

5 lbs flour (20 cups)
4 c. dry milk
3/4 cups baking powder
2 Tbsp salt
1 Tbsp Cream of Tartar
5 cups vegetable shortening

(you should not use margarine or butter in substitution for the shortening unless you are going to refrigerate your mix)

To Make:

Biscuits
3 cups quick mix
3/4-1 cup water
Spread 2 tablespoons of melted butter on biscuits before baking. Bake for 10-12 min at 450 degrees

Try to handle the dough as little as possible, as this will create rubberiness if handled too much.

Shortcake
3 cups quick mix
2 Tbsp sugar
3/4 cup water
Bake 10-12 min at 450 degrees

Coffee Cake 
3 cups quick mix
1/3 cup sugar
1 egg
1 cup water
 1 tsp vanilla
(optional: add 1/2 cup sour cream to make it creamier)

Filling
1 cup flour
1 cup brown sugar
2 tsp cinnamon
1/2 cup butter

Preheat oven to 350 degrees. Combine quick mix, sugar, egg, water and vanilla. Add dry ingredients. Prepare filling by mixing dry ingredients together, then cut in the butter. Spread half of the cake mix, half of the filling, then the other half of the cake mix, then the other half of the filling in an 8x8 pan. I used a 2" deep pan and it filled the pan to the top. So, you could probably use a larger pan and the cake would be just a little thinner. Bake for 40-50 min. (mine was done in 30 min.)

The original recipe I found only had half the filling recipe and used it only in the middle. The coffee cake really needed some sweetness sprinkled on the top though. So I double the filling and sprinkled the other half on the top----much better!!

UPDATE: Another delicious and quick recipe to make with this mix is:

Cinnamon Roll Biscuits

4 1/2 cups baking mix
1 1/3 c milk
 2 T butter
1/4 cup brown sugar
2 T. cinnamon

Glaze:
1 1/2 cup powdered sugar
2-3 T milk

Mix together mix and milk. Roll out the dough on floured surface. Spread butter, then sprinkle on brown sugar/cinnamon mix. Roll up the dough and cut into 2" wide slices. Bake at 400 degrees for 10-15 min. Mix together the glaze then spread on rolls when cooled a little.

Homemade Tortilla Mix (I just made half of this recipe)

16 cups flour
2 Tbsp baking powder
2 Tbsp salt
1/2 cups shortening

To make:
2 cups of tortilla mix
1 cup of water

Divide dough into 15 little balls, cover and let them rise 10-15 min. Roll them out as thin as you can get them. (You can use a tortilla press, but I have found that a rolling pin works just as well, or better) . Fry on a dry, hot griddle, about 2 min. on each side or until little brown spots begin to appear. If it takes longer than 2 minutes your griddle is not hot enough.

The consistency you are looking for in the dough is almost like play dough. If it is too crumbly they will not roll out well. That is why the water amount is so varied. Depending on the humidity of the day, you will need more or less.

Pancake/Waffle Mix

8 cups of unbleached flour
2 cups nonfat dry milk
1/2 cup sugar
3 Tbsp baking powder
1 1/2 Tbsp baking soda
2 tsp salt

To Make Pancakes: 
2 cups mix
1 3/4 cups of water or milk
1 egg
2 Tbsp vegetable oil

To Make Waffles:
2 1/2 cups of mix
2 cups of water
3 eggs
1/4 cup vegetable oil

Corn Bread Mix

4 cups flour
4 cups yellow cornmeal
2 cups dry milk
1 1/4 cups sugar
1/2 cup baking powder
1 Tbsp baking soda
2 tsp salt

To Make: 
1 1/4 cups cornbread mix
1 egg beaten
1/2 cup water or milk (butter milk is even better!)
2 Tbsp oil
Pour into 8x8" pan. Bake 12-15 min at 425 degrees

(you can also make corn muffins by baking them in muffin tins for 15 min. at 425 degrees)

Muffin Mix

12 cups flour
4 Tbsp baking powder
1 Tbsp baking soda
2 tsp salt
4 1/2 cup sugar

Plain muffins:

2 3/4 cups mix
2 eggs
1 cup milk
1/4 cup oil
Bake 15-18 min at 400*

Optional Streusel Topping:
1/2 cup of flour
1/2 cup of brown sugar
2 tbsp butter

Cut the butter into the flour/brown sugar mix. Pour half of muffin mix into half of muffin cups. Sprinkle half of the streusel, then cover with the rest of the muffin mix, and finally top with the rest of the streusel.

Blueberry Muffins:

2 3/4 cups of muffin mix
2 eggs
1 cup sour cream
1/4 cup milk
1 cup blueberries
1 tsp vanilla
Bake 15-18 min at 400*

The final cost:

$20 for the containers @ $3 each $ 6.36 for the 20 lbs of flour $2.38 for a large container of Baking Powder $2.19 for 4lb sugar $4.00 for shortening

All the other ingredients I already had on hand. Probably the most expensive item, if you don't already have it in your pantry, is the powdered milk. So about $35 total. Only about $14 if you take out the containers. Not bad considering you have the equivalent of about:

8 brownie mixes 6 muffin mixes 8 cornbread mixes 5 pancake/waffle mixes 8 tortilla recipes that make at least 15 tortillas each 8-9 shortcake/biscuit/coffe cake mixes

So, let's say I spent a total of $20 (because of counting in the cost of the items I already had on hand) then it would be about $.46 a mix. Not bad!

Time: About 1 hour

2 sticks (16 tablespoons) butter, more for pan and parchment paper
8 ounces bittersweet chocolate
4 eggs
1/2 teaspoon salt
1 cup dark brown sugar, such as muscovado
1 cup granulated sugar
2 teaspoons vanilla extract
1 cup flour
1/2 cup chopped walnuts or 3/4 cup whole walnuts, optional.

1. Butter a 13-by-9-inch baking pan and line with buttered parchment paper. Preheat oven to 350 degrees. In top of a double boiler set over barely simmering water, or on low power in a microwave, melt butter and chocolate together. Cool slightly. In a large bowl or mixer, whisk eggs. Whisk in salt, sugars and vanilla.

2. Whisk in chocolate mixture. Fold in flour just until combined. If using chopped walnuts, stir them in. Pour batter into prepared pan. If using whole walnuts, arrange on top of batter. Bake for 35 to 40 minutes or until shiny and beginning to crack on top. Cool in pan on rack.

Yield: 15 large or 24 small brownies.

Note: For best flavor, bake 1 day before serving, let cool and store, tightly wrapped.

Brownie Pumpkin Cheesecake

Ingredients

Brownie Base
1 box (1 lb 3.9 oz) dark chocolate fudge brownie mix
Water, vegetable oil and eggs called for on brownie mix box
Filling
2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
1/2 cup canned pumpkin (not pumpkin pie mix)
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon pumpkin pie spice
1/2 cup semisweet chocolate chips, melted

Directions

1 Heat oven to 350°F. Spray 10-inch springform pan with cooking spray. Make brownie batter as directed on box for basic recipe; spread in pan. Bake 28 to 30 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean.

2 Meanwhile, in large bowl, beat cream cheese and sugar with electric mixer on medium speed until smooth and creamy. Beat in pumpkin until well blended. On low speed, beat in eggs 1 at a time, just until combined. Stir in vanilla and pumpkin pie spice. Reserve 1/2 cup filling in small bowl. Pour remaining filling over baked brownie base.

3 Stir melted chocolate into reserved filling; place chocolate in large resealable food-storage plastic bag. Seal bag; cut off 1 corner of bag. Squeeze bag to pipe jack-o'-lantern face on cheesecake.

4 Bake 40 to 45 minutes or until center is almost set. Cool 30 minutes. Run knife around edge of pan to loosen cheesecake. Cool 30 minutes longer. Refrigerate at least 2 hours before serving. Cover and refrigerate any remaining cheesecake.

Death by Chocolate

TOD DURCH SCHOKOLADE (DEATH BY CHOCOLATE) (jul/aug90pg6) 11-13-99

1 recipe of chocolate brownies, baked in 9 x 13" pan
¼ cup Kaluha, optional
2 pkgs. chocolate mousse, prepared
1 lg. container whipped topping
8 Heath Bars, crushed
1 cup pecans, chopped

Prepare brownies.
Cool and poke holes.
Pour Kaluha over brownies.
Crumble and place half in a large serving bowl.

Prepare the chocolate mousse according to directions
and divide into two portions.

Spread half of the mousse over the crumbled brownies.

Spread half the container of whipped topping over the mousse.

Crush the Heath Bars and the nuts and sprinkle half over the
whipped topping. Repeat layers.

Refrigerate and allow to set for several hours or overnight for
flavors to mingle.

This is absolutely delicious and will serve 12-15 people easily.
(Maybe more because it's very rich.)

Brownie Pecan Pie Recipe

Brownie Pecan Pie Recipe
2/3 C. sugar
1/8 t. salt
1 C. light corn syrup
1 4-oz. package sweet cooking chocolate, broken into pieces
3 T. butter or margarine
3 eggs, slightly beaten
1 t. vanilla extract
1 C. pecans, coarsely chopped
1 unbaked 9-inch pastry shell
Whipped cream

Combine sugar, salt and corn syrup in a small saucepan.
Bring to a boil over medium heat, stirring until sugar is dissolved.
Boil 2 minutes.
Remove from heat; add chocolate and butter, stirring until
chocolate is melted and mixture is smooth.
Cool.
Gradually pour chocolate mixture over eggs, stirring constantly.
Add vanilla and pecans; mix well.
Pour into pastry shell.
Bake at 350° F. for 50 minutes; cool.
Top with whipped cream.
Serves 8.

Caramel Brownies

A brownie with a rich caramel filling

Ingredients:
• 1 package Duncan Hines Devils Food cake mix
• 1 large bag caramels
• 3/4 cup margarine
• 1/2 cup evaporated milk
• 1/3 cup evaporated milk
• 1 1/2 cups chocolate chips

Directions:
1: Mix the cake mix, margarine, and evaporated milk together.
2: Pat half the mixture into a 9x13-inch pan.
3: Bake for 6 minutes at 350 degrees.
4: Melt 50 caramels in the 1/3 cup of evaporated milk.
5: Sprinkle 1 1/2 cups chocolate chips over baked mixture.
6: Pour melted caramels over chocolate chips.
7: Sprinkle last half of cake mixture over caramels.
8: Bake at 350 for 18 minutes.

Additional Tips:
Vanilla ice cream goes well with this!

Brownie Points - Goldy Schulz

Brownie Points

From Double Shot by Diane Mott Davidson

12 T (one and a half sticks) unsalted butter
6 oz unsweetened chocolate, broken into small pieces
1 T unsweetened alkalinized cocoa (recommended
brand: Hershey's Premium European-Style)
1 1/4 C cake flour (high altitude: add 2 tablespoons)
3/4 t baking powder
1/4 t salt
4 large eggs
2 1/4 C sugar (high altitude: subtract 2 T)
2 t vanilla extract
1 1/2 C chopped pecans, lightly toasted and cooled

Preheat the oven to 325F.
Butter a 13x9" metal (not glass) baking pan.

Melt the butter with the chocolate in the top of a double
boiler (over boiling water), stirring frequently.
When the chocolate has melted, set the mixture aside to cool.

Sift together the cocoa, flour, baking powder and salt.
Sift again and set aside.

Beat the eggs until they are well combined, then gradually
add the sugar, beating constantly. Add the vanilla and the
cooled chocolate mixture, stirring until well combined.

Sift the dry mixture over the egg mixture, and stir this
mixture only until it is completely combined. Spread the
batter in the prepared pan, and sprinkle the nuts on top.

Bake for 25-30 minutes, or until a toothpick inserted in the
center comes out with only a crumb or two adhering to it.
Remove to a rack and cool completely.

Makes 16 large or 32 small brownies.
